Write up on using PocketScroller for a Christmas countdown clock

I did a very simple modification of PixelOverlay-Countdown.pl and will probably play with it more extensively in the future.

Some things where I got hung-up:
* Not exactly a hang-up, but I did blow up a panel, PocketBeagle, PocketScroller and WiFi dongle by plugging in a 12V adapter. That doesn't happen to me often. Saw 5A and thought 5V. Oops.
* I never figured out how to get the script to run on boot-up. For now, I just leave the signs running all the time and restart the script if power gets cut to the sign for any reason.
* I bought a panel on Amazon (https://www.amazon.com/gp/product/B079JSKF21) and cannot seem to get it to work at all. This is because I blew up the 64x32 panel I bought from Adafruit for way too much money.

Check out the project. This is a super-awesome controller. Very flexible. Just loving FPP.
