What's the recommended way to set date/time on a BBB running in Remote Mode?

If you have your master configured to talk to a remote NTP server, you can go into the remote and set it to use NTP and point to the master's IP address.

The remote doesn't really need the correct time though, clock time is not used for MultiSync.  The master sends out packets that says "I'm at position X in the sequence/media" and the remote tries to make sure it is at the same position.
