I'm seeing something I'm mystified by. I don't recall seeing it before and I haven't been able to find any information on it.

Somehow I have an SSID coming from my Falcon controller named AI-THINKER_{sixAlphaNumerics}.

Has anyone seen this before?
Does anyone know how to turn it off?
Is anyone 100% sure it should NOT be there? (I'm starting to get a bit leery of this thing; not sure how it set up shop on the controller)

Or maybe I'm making some dumb mistake because doing xmas lights a while tonight, but I do know for a fact this network is coming from the controller.

All Falcon v3 series do that out of the box.  That is normal and you must have just noticed it.  There is a firmware version out there that will allow you to turn off the wifi, but it has not been publicly released.  You might be able to ask Falcon Support for a copy if it is bothering you, but it should not be generating any interference or traffic when not in use.
