I am just wondering if anyone has looked at extending the FPP status display functionality to one of those small USB based monitors that you drive over USB serial that people mostly use for AIDA64 etc. They seem very cost effective and would make a great addition for adding a simple screen to FPP but I may be incorrect processing overhead wise.

I can only speak for myself.  Once FPP is up and running I almost never have a need to look at the FPP status display.  I do have 13 FPP remotes and the only place I look once in awhile is at the multisync display on the master.  Adding another device like you are suggesting just does not seem worthwhile to me.
