I am testing out running a few of my props wirelessly instead of using Cat5 cables this year. If it proves successful I will convert more of my display to wireless data.

I've have 3 Pis set up to connect to the show network wirelessly. The controllers are roughly 20-25 feet from the router in an open area- so distance isn't an issue. I'm looking for recommendations for USB Wifi adapters for Pi and BBB. All of the Pis/BBB will have PiCaps/Octoscroller on it, will be ran as remotes, and be powered via the PiCap.

The 3 that I have set up so far I've only set up using the onboard wireless board- and it seems to only connect when it wants to. So I'm thinking a better wireless board is needed (as I expected).

Most Pis have Wi-Fi on them already. For the BB, I would suggest getting an adapter that supports AP mode, but those are hard to find, but Wired Watts and KulpLights carries them.

I have not had any issues with the on board Wi-Fi on any of my Pis
If to err is human, I am more human than most people.

Currently I have 11 remotes running on wifi and a couple more for backup or just have not been put out yet.  The only external wifi adapters I use on are on my 3 Beagle Bones.  All those are Edimax N300 or AC1200 units.  The key is to check to see if the wifi adapter is supported on the latest Linex version.  I've never bothered to look for adapters that support AP mode because that has never been something that impacted my ability to access or setup a unit from scratch.

My only concern with the on-bard wireless is it seems it doesn't want to connect to the wireless network. I'm not sure why (it could be a typo when I setup the password), but 2 of the 3 don't seem to want to connect.

Because they are linux based they are very sensitive to the use of special characters and capitalization and spaces in your ssid and passwords.  Something to consider.

The network name has a couple capital letters but the password is all lower case and a few numbers- no special characters at all.

Caps caught me a couple of times because I type fast and when I read the name it read correctly, but it was not the same.  sigh.
