Title: gpio pins

is it possible to use these cables to connect pins 18 and 19 only to the picap to leave the other pins unused to be able to connect SSR relays?

You would need the Male to Female version of those cables to go from the pins on the Pi to the socket on the PiCap.

You could also use a shim:
