I just don't have another 100 foot CAT5 to swap out at the moment. 

Go out and buy a cable.  It's not like they are hard to come by or expensive.
Better yet, invest in the crimping tool, and buy a 1000 foot box and a bag of connectors.  Always useful to keep in stock.

Can you move one of them closer to the other to test with a different cable so that you aren't chasing non-existent problems? Are you using Cable Glands in any of your boxes? Those have been known to be problematic.

Nailed it. It was the Ethernet bulkhead connector slightly unseating. Just enough for one port to be corrupted. 

I'm very impressed by this community and its responsiveness. 

Also, thank you, I will switch to automatic configuration of F48 by xlights.
